Vegetarian Griddle Sticks

Vegetarian griddle sticks pair savory veggie sausage with a crisp pancake coating, all served on a wooden skewer. They make a playful breakfast, brunch, or snack, especially with maple syrup for dipping. This homemade version uses a few basic ingredients and can be prepared in about two minutes per stick once the oil is hot.

Vegetarian Griddle Sticks: Ingredients and Preparation

Frozen versions of sausage wrapped in pancake batter may be available in grocery stores, but vegetarian options can be harder to find. Making them at home lets you choose the veggie sausage and pancake mix that suit your preferences. Check package labels if you need to confirm that the products meet your dietary requirements.

Ingredients

Makes 10 to 12 sticks.

  • 1 box veggie sausage links
  • 1 packet pancake mix
  • 1 cup water
  • 10–12 small wooden skewers
  • Oil for frying, such as canola or vegetable oil

Step-by-step method

  1. Mix the batter. Stir the pancake mix and water together in a small bowl until combined. If preferred, use your favorite pancake recipe instead, following its usual proportions.
  2. Skewer the sausage. Carefully push a wooden skewer lengthwise into the center of each sausage link, inserting it at least two-thirds of the way through. For easier coating, transfer the batter to a tall, narrow container that is safe to use with food.
  3. Heat the oil. Pour 2–3 inches of oil into a large, heavy pot. Heat it to about 350°F, using a thermometer to check the temperature if available. Take care around hot oil and do not leave it unattended.
  4. Coat and fry. Dip each sausage link into the batter until fully covered. Carefully lower it into the hot oil and fry for about two minutes. Avoid crowding the pot, which can make the oil temperature drop. Remove each stick and let excess oil drain on paper towels.

Serving suggestions

Serve the sticks warm with pure maple syrup for dipping. Fruit and yogurt make easy sides for a more complete breakfast or snack. Let the sticks cool briefly before serving, especially to children, and handle the skewers carefully.

These vegetarian griddle sticks are a simple way to bring a familiar pancake-and-sausage combination to the table without meat. Prepare them in small batches for the best coating, and serve them fresh while the outside is crisp and warm.
